Sunrise Smoothies

I love the sunrise. If I could wake up to watch it every morning, I would. I think I like them because they promise so much hope, the start of a new day! And today, I started a new job. I had a good first day. There is always a lot to learn, including, "When is lunch?" So I was glad I had this delicious smoothie to help me start off my morning right. I found the inspiration for this sunny smoothie at My Recession Kitchen.

  • 1/2 banana, sliced
  • 3/4 cup pineapple, chopped
  • ½ cup ice cubes
  • ½ banana, sliced
  • 3/4 cup strawberries, sliced
  • ½ cup ice cubes
  • ½ banana, sliced
  • 3/4 cup blueberries
  • 1 cup (packed) fresh spinach
  • ½ cup ice cubes

Add banana, pinapple, and ice cubes to blender and blend until smooth. Add liquid such as juice or water if necessary. Divide between two glasses.

Rinse out the blender, then add banana, strawberries, and ice cubes and blend until smooth.  Pour slowly over the back of a soup spoon on top of the pineapple layer.

Tips from a student cook…

This recipe makes enough for two servings. I actually did the work for this smoothie last weekend. I ate one then, then I put the other in the freezer. I took it out to thaw before I went to bed last night, and enjoyed a really delicious and easy breakfast this morning! You could substitute raspberry for the red layer, or blackberries for the purple, as the author of the original recipe used, but the trick to a great smoothie really is hidden in the banana. It gives just the right amount of smoothness!
